Abstract:
in order to study the application effect of N ^ α-Laurol-L-Arginine ethyl ester (LAE) in the preservation of green pepper, ethyl lauroyl Arginine hydrochloride, methyl paraben sodium and chitosan were optimized and applied to the preservation of green pepper, effect of ascorbic acid content and chlorophyll content. The results showed that the optimal compound formula was that the mass concentration of LAE was 700 μg/mL, the mass concentration of methyl paraben sodium was 100 μg/mL, and the mass concentration of chitosan was 10 mg/mL. During the storage period, the optimal compound formula can significantly improve the good fruit rate of green pepper, reduce the decay index, and reduce the loss of ascorbic acid and chlorophyll in green pepper. Experiments show that LAE compound preservative has good preservative effect on green pepper.
